Dragonwell, also known as Long Jing, is one of the "10 Famous Teas" of China The original growing area for Dragonwell is Hangzhou, Zhejiang. More recently, Xifeng, near Hangzhou has been producing this tea.
The Art of Hand Roasting
In marking Dragonwell, newly sprouted tea leaves are hand roasted in a wok to give them a flat, shiny appearance. This traditional and artisanal technique determines the flavorful profile and value of the tea. It take about one hour to roast each pound of tea.

Brewing
Brew one level teaspoon of Dragonwell in eight ounces of pure water at 175°F for four minutes. The leaves can be re-infused at least three times.
